Tomato and Genzano bread soup
Olive oil, bread, pasta, legumes, fruit and vegetables are the indisputable protagonists of the Mediterranean diet. These ingredients, wisely combined with other animal-based products such as milk, cheese, eggs, fish and meat guarantee a balanced and pleasurable diet where there are no prohibited foodstuffs, but only ingredients that should be eaten more or less frequently. This diet, therefore, reconciles healthy eating with taste but with as little sacrifice as possible.

Ingredients
- 4 slices Genzano Bread
- 500 g fresh tomatoes
- 2 medium-sized onions
- Extra virgin olive oil
- Fresh grated Pecorino Romano to taste
Directions
- Fry the onions with olive oil, add the fresh tomatoes and leave to cook until the tomatoes are ready, and then continue to cook on a very low heat for a further 15 minutes until the ingredients are well blended.
- Break the bread into large pieces, place in individual serving bowls and cover with a few ladles of soup.
- Sprinkle with Pecorino Romano and serve hot.
