Easy vegetable curry for 2 people

Ingredients
- 2 medium potatoes
- 2 Carrot
- Two vegetable marrow / courgette
- 1 onion
- 2 cloves garlic
- 1 fresh green pepper
- 2 tablespoons vegetable oil
- 1 teaspoon ground cumin
- 1 Piece cauliflower florets
- 1 tablespoon Peas
- 1 tablespoon curry
- 1 cup water
Directions
- Boil the potatoes then peel and cut them into large cubes.
- Chop the carrots into cubes.
- Slice the vegetable marrows and onion.
- Beat the garlic.
- Heating the vegetable oil add the chopped green pepper with cumin in a pan (preferibly a wok pan).
- Sauté for a few seconds mixing.
- Add the onion and garlic and mix them well.
- Stir the curry and sauté for a few more minutes.
- Add 1 cup water and pour the vegetables into the pan.
- Lower the heat and cover with a lid.
- Cook until vegetables become tender.
- Decorate with fresh lettuce leaves and serve.
