Easy vegetable curry for 2 people

Ingredients

  • 2 medium potatoes
  • 2 Carrot
  • Two vegetable marrow / courgette
  • 1 onion
  • 2 cloves garlic
  • 1 fresh green pepper
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cumin
  • 1 Piece cauliflower florets
  • 1 tablespoon Peas
  • 1 tablespoon curry
  • 1 cup water

Directions

  1. Boil the potatoes then peel and cut them into large cubes.
  2. Chop the carrots into cubes.
  3. Slice the vegetable marrows and onion.
  4. Beat the garlic.
  5. Heating the vegetable oil add the chopped green pepper with cumin in a pan (preferibly a wok pan).
  6. Sauté for a few seconds mixing.
  7. Add the onion and garlic and mix them well.
  8. Stir the curry and sauté for a few more minutes.
  9. Add 1 cup water and pour the vegetables into the pan.
  10. Lower the heat and cover with a lid.
  11. Cook until vegetables become tender.
  12. Decorate with fresh lettuce leaves and serve.
