Ingredients

  • 800 g soaked salt cod
  • 400 g sieved tomatoes (passata)
  • 300 g onions
  • 100 ml extra virgin olive oil
  • 50 g pine nuts
  • 50 g raisins

Directions

  1. Bone the cod and cut into pieces of approximately 5 cm.
  2. Stew the onions in olive oil in a large saucepan.
  3. Add the cod to the stewed onions and fry on a low heat until golden brown, add the pine kernels, raisins (previously soaked in tepid water) and the sieved tomatoes.
  4. Allow to cook on a low heat for approximately 20 minutes in a covered saucepan stirring gently from time to time.
