Ingredients
- 800 g soaked salt cod
- 400 g sieved tomatoes (passata)
- 300 g onions
- 100 ml extra virgin olive oil
- 50 g pine nuts
- 50 g raisins
Directions
- Bone the cod and cut into pieces of approximately 5 cm.
- Stew the onions in olive oil in a large saucepan.
- Add the cod to the stewed onions and fry on a low heat until golden brown, add the pine kernels, raisins (previously soaked in tepid water) and the sieved tomatoes.
- Allow to cook on a low heat for approximately 20 minutes in a covered saucepan stirring gently from time to time.
