Rice Pilaf with Apricots and Almonds
This Rice Pilaf with Apricots and Almonds recipes is for 6 persons. Pilaf (also known as pilau, peleau and plov) is a dish in which rice is cooked in a seasoned broth. In some cases, the rice may also attain its brown color by being stirred with bits of cooked onion, as well as a large mix of spices. Ingredients
- 2 cups of rice;
- 3 cups chicken broth;
- 50-100 g. almonds;
- 50-100 g. apricot;
- 2 tablespoon butter;
- salt
Directions
- Rinse the rice until the water is clean and clear and leave it inside mild water for 20 minutes.
- After washing the apricots, divide them into pieces, fry them in a pan with a little bit of butter (1 tablespoon) at low heat, be careful not to let them turn into black too much.
- Add the almonds (almonds without shell, you can cut them into 2 or 3, depending on how big they are) to the apricots and fry them in the same way.
- Filter the water of the rice then saut´ the rice with 1 tbsp butter for 10 minutes.
- When rice seems a bit fried, add a bit of salt and the chicken broth to the rice.
- Increase the heat from low to medium.
- When the rice starts to absorb the water, low the heat down and add the fried almonds and apricots into the rice.
- Mix them together and cook them at low heat until the rice becomes soft.
- Put the lid on tight and leave it for 10-15 minutes to rest before serving.
- You can keep some almonds or apricot pieces (fried or raw) aside to garnish your rice while serving.
